Yummy Tuscan Chickpea Fritters



Ceci or chickpeas are a staple ingredient in Tuscany and these simple ceci fritters are great as an appetizer or can serve as a part of a weekday meal. Made with just a handful of fresh ingredients, they are fast to prepare and are ready to serve in less than 20 minutes.

I love serving them with a lemony Greek yogurt dressing or fresh tahini.


Ingredients:

  • A can of chickpeas or fresh cooked chickpeas

  • handful of flour

  • fresh chopped parsley

  • Fresh grated parmesan cheese

  • 1 egg

  • salt/ pepper to taste

In a bowl, combine the fritter ingredients and use a fork to mash everything together. It will take a little elbow grease, and you can do it faster using a mini food processor, but it definitely works fine with a fork.

Divide this mixture into approximately 6 thin patties. Keeping them thin will ensure that the chickpea fritters cook well on the inside without burning on the outside.

Heat up some vegetable oil in a pan and then fry the patties for 2 to 3 minutes on each side until golden brown and firm. That’s it. Now you are ready to add these to salads, dip them in a sauce or simply enjoy them on their own!
